Preheat your oven to 400°F (200°C).
Slice the top off the head of garlic to expose the individual cloves. Drizzle with a teaspoon of olive oil and wrap it tightly in aluminum foil.
Roast the wrapped garlic in the oven for 30-35 minutes until the cloves are soft and caramelized.
Once the garlic is cool enough to handle, squeeze the roasted garlic cloves out of their skins into a food processor.
Add the drained chickpeas, tahini, lemon juice, and cumin to the food processor.
Pour in the remaining olive oil and a pinch of salt.
Blend everything until smooth, scraping down the sides as necessary.
If the hummus is too thick, gradually add water, one tablespoon at a time, until you reach your desired consistency.
Taste and adjust salt and lemon juice as needed.
Transfer the hummus to a serving bowl. Drizzle with additional olive oil and sprinkle with paprika and fresh parsley before serving.
