Method
Start by placing the diced mangoes in a blender. Add the coconut milk, honey (if using), lime juice, and a pinch of sea salt.
Blend the mixture on high until smooth and creamy. You may need to scrape down the sides to ensure everything is well combined.
Taste the mixture and adjust sweetness if needed by adding more honey or syrup. Blend again if you make any adjustments.
Pour the mango mixture into popsicle molds, filling them about three-quarters full to allow for expansion.
If desired, add a few slices of fresh mango or berries to each mold for a colorful surprise.
Insert the popsicle sticks into the molds and place them in the freezer.
Freeze for at least 6 hours, or until completely solid.
To release the popsicles, run warm water over the outside of the molds for a few seconds, then gently pull the popsicles out.
