Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking.
In a large bowl, toss the cut sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper until well-coated.
Spread the sweet potato fries in a single layer on the prepared baking sheet. Bake for 20-25 minutes, flipping halfway through, until they are crispy and golden brown.
While the fries are baking, prepare the toppings. In a small bowl, combine the black beans and corn. You can season this mixture with a little salt and lime juice if desired.
Once the fries are done, remove them from the oven and sprinkle the shredded cheddar cheese evenly over the top. Return the fries to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
Remove from the oven and layer the black bean and corn mixture on top of the cheesy fries.
Top with diced avocado, a drizzle of Greek yogurt or sour cream, chopped green onions, and fresh cilantro.
Serve immediately while hot and enjoy the delightful combination of flavors!
