Preheat the oven to 350°F (175°C) and line an 8x8 inch (20x20 cm) square baking pan with parchment paper, leaving a little overhang for easy removal.
In a large mixing bowl, combine the rolled oats, chopped almonds, walnuts, sunflower seeds, and cinnamon. Mix well.
In a small saucepan over low heat, combine the honey (or maple syrup) and almond butter, stirring until melted and combined. Remove from heat and stir in vanilla extract and salt.
Pour the wet mixture over the dry ingredients and mix until everything is evenly coated. If using, fold in the dried cranberries or raisins.
Transfer the mixture into the prepared baking pan, pressing it down firmly to create an even layer. Use the back of a spatula or your hands (dampened) to pack it tightly.
Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown.
Allow the granola bars to cool completely in the pan before using the parchment paper overhang to lift them out. Cut into bars or squares.
