Prepare Zucchini: Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out any excess moisture to avoid sogginess in the brownies.
Mix Wet Ingredients: In a large mixing bowl, combine the grated zucchini, eggs, maple syrup, applesauce, and vanilla extract. Whisk until well blended.
Combine Dry Ingredients: In a separate bowl, whisk together the almond flour, cocoa powder, baking soda, baking powder, and salt until thoroughly combined.
Combine Mixtures: Pour the dry ingredients into the wet ingredients and stir until just combined. Be careful not to overmix.
Add Mix-ins: Fold in dark chocolate chips and walnuts, if using, for extra texture and flavor.
