In a large bowl, combine olive oil, balsamic vinegar, minced garlic, oregano, smoked paprika, salt, and pepper to create a marinade. Mix well.
Add the sliced zucchini, bell peppers, onion wedges, cherry tomatoes, and mushrooms to the marinade. Toss until the vegetables are evenly coated. Let them marinate for at least 30 minutes for enhanced flavor.
Preheat your grill to medium-high heat.
While the grill is heating, thread the marinated vegetables onto skewers, alternating between the different types for a colorful presentation.
Once the grill is hot, place the skewers on the grill. Cook for 10-15 minutes, turning occasionally, until the vegetables are slightly charred and tender.
Remove the skewers from the grill and let them cool for a few minutes.
Garnish with fresh basil leaves before serving.
