Method
In a medium saucepan, combine the chopped dried figs and water. Bring to a gentle boil over medium heat, then reduce to a simmer.
Cook for about 10 minutes, stirring occasionally, until the figs soften and absorb some water.
Add the halved cherries, grated ginger, brown sugar, lemon juice, cinnamon, and a pinch of salt to the saucepan. Stir to combine all ingredients.
Allow the mixture to simmer uncovered for an additional 15-20 minutes, until it thickens to a syrupy consistency. Stir occasionally to prevent sticking.
Remove from heat and let it cool slightly before transferring to a jar or bowl. The compote will thicken further as it cools.
Serve warm or allow it to chill in the refrigerator for a refreshing spread on toast or dessert topping.
