Method
In a large salad bowl, place the sliced cucumbers, diced red bell pepper, and red onion.
Add the chopped cilantro and roasted peanuts into the bowl.
In a separate small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey or agave syrup, grated ginger, and sriracha sauce if using.
Pour the dressing over the salad ingredients and gently toss everything together until well combined.
Let the salad sit for about 10-15 minutes to allow the flavors to meld together.
Before serving, taste and adjust seasoning with salt and pepper if needed.
