In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), peppermint extract, and vanilla extract. Mix well until creamy and smooth.
Gently fold in the mini chocolate chips, ensuring they are evenly distributed throughout the yogurt mixture.
Pour the yogurt mixture into popsicle molds, filling each mold about 3/4 full.
Insert sticks into the molds and tap the molds gently on the counter to eliminate any air bubbles.
Freeze for at least 4 hours, or until completely solid.
To remove the popsicles, run warm water over the outside of the molds for a few seconds. Gently tug on the sticks until the pops slide out.
If desired, garnish with fresh mint leaves before serving for an additional touch of flavor and freshness.
