Method
In a large mixing bowl, combine rolled oats and almond flour. Stir well to combine the dry ingredients.
In a separate bowl, mix together tahini, maple syrup, vanilla extract, and sea salt until smooth and creamy.
Pour the tahini mixture into the dry ingredients and mix thoroughly. Add chopped dried cherries and pumpkin seeds, stirring until evenly distributed. If using chia seeds, fold them in at this stage.
Once the mixture is well combined, use your hands to form small balls, about 1 inch in diameter. If the mixture is too sticky, refrigerate it for 15-20 minutes to firm up.
Place the energy bites on a parchment-lined tray and refrigerate for at least 1 hour to set.
After setting, transfer the bites to an airtight container and store them in the refrigerator for up to one week for optimum freshness.
