Prepare Oat Milk: In a blender, combine the rolled oats, water, ground cardamom, and a pinch of salt. Blend on high speed for about 30 seconds until smooth.
Strain: Pour the blended mixture through a nut milk bag or a fine mesh sieve into a bowl to separate the oat milk from the solids. Squeeze out as much liquid as possible.
Flavor the Milk: If using a vanilla bean, slice it open and scrape out the seeds. Add the vanilla seeds (or vanilla extract) and maple syrup to the strained oat milk, and blend again briefly to combine.
Heat and Froth: In a small saucepan, gently heat the oat milk over medium-low heat, whisking continuously until warm but not boiling. For a frothy texture, use a milk frother or whisk vigorously until frothy.
Combine with Coffee: In a large mug, pour in the brewed espresso or strong coffee. Slowly add the warm oat milk mixture, stirring gently to combine.
Garnish: Sprinkle a dash of ground cinnamon on top for garnish and additional flavor.
