Method
Heat olive oil in a large skillet or wok over medium-high heat.
Add the minced garlic and grated ginger; sauté for about 30 seconds until fragrant.
Toss in the sliced red and yellow bell peppers, broccoli florets, and snap peas. Stir-fry for around 5-7 minutes until vegetables are tender but still crisp.
Add the spiralized zucchini noodles and continue to stir-fry for an additional 2-3 minutes, allowing the zucchini noodles to soften slightly.
In a small bowl, mix together the soy sauce, sesame oil, rice vinegar, and honey. Pour this sauce over the stir-fried vegetables and noodles, tossing to combine all the ingredients well.
Remove from heat and transfer to a serving platter.
Garnish with sesame seeds and fresh cilantro before serving.
