Instructions
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy.
Mix in the eggs one at a time, followed by the vanilla extract, blending until well combined.
In another bowl, whisk together the all-purpose flour, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
Gently fold in the chocolate chips and crushed shortbread cookies for that Twix crunch.
Using a cookie scoop or your hands, form balls of dough and place them on the prepared baking sheets about 2 inches apart.
Use your thumb or the back of a teaspoon to create a small indentation in the center of each cookie ball.
Spoon a small amount of caramel sauce into the indentation of each cookie.
Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and the center is still soft.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.
Once cooled, you can drizzle extra melted chocolate over the top for an extra decadent touch.
