In a skillet over medium heat, cook the ground beef (or plant-based alternative) until browned. Drain any excess grease.
Stir in the taco seasoning and 1/4 cup of water. Cook according to the seasoning packet instructions, usually about 5-7 minutes, until well combined and thickened. Remove from heat.
In a separate bowl, mix together the softened cream cheese and ranch dressing until smooth and creamy.
Lay out the mini flour tortillas on a clean surface. Spoon a dollop of the cream cheese mixture onto the center of each tortilla, followed by a tablespoon of the seasoned meat.
Top each bite with shredded cheddar cheese, diced tomatoes, sliced green onions, and black olives.
Carefully fold the tortillas over the fillings, securing them like mini tacos. If you're using tortilla chips, layer the toppings directly on the chips for a crunchy variant.
Preheat your oven to 350°F (175°C). Place the assembled Taco Ranch Bites on a baking sheet and bake for about 10 minutes, or until the cheese is melted and the tortillas are slightly crispy.
Allow the Taco Ranch Bites to cool for a few minutes before serving. Garnish with fresh cilantro if desired.
