Method
In a large skillet, heat the olive oil over medium heat.
Add the diced sweet potatoes and cook for about 10-12 minutes, stirring occasionally, until they begin to soften.
Add the diced onion and bell pepper to the skillet. Continue cooking for another 5 minutes, or until the vegetables are tender.
Stir in the minced garlic, smoked paprika, cumin, salt, and pepper. Cook for an additional 2 minutes, until the garlic is fragrant.
Using a spoon, create 4 small wells in the hash mixture. Crack an egg into each well.
Cover the skillet and reduce the heat to low. Cook for 5-7 minutes, or until the eggs reach your desired doneness (runny yolks or firm).
Remove from heat and let it cool slightly before serving.
Garnish with fresh cilantro or parsley before serving.
