Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the mixed nuts, olive oil, maple syrup, cayenne pepper, smoked paprika, sea salt, brown sugar, vanilla extract, and ground cinnamon.
Toss the ingredients together until the nuts are evenly coated with the sweet and spicy mixture.
Spread the coated nuts in a single layer on the prepared baking sheet.
Roast in the preheated oven for about 15-20 minutes, stirring halfway through to ensure even roasting. Watch carefully to prevent burning.
Once the nuts are golden brown and fragrant, remove them from the oven and let them cool on the baking sheet.
Break apart any clusters and enjoy as a snack or on top of salads and desserts!
