Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the sliced peaches, 1/2 cup of sugar, cinnamon, vanilla extract, and lemon juice. Toss to coat and set aside for about 10 minutes.
In another bowl, whisk together the flour, baking powder, salt, and remaining 1/2 cup of sugar.
Gradually pour in the milk and melted butter into the flour mixture, stirring until just combined. The batter will be somewhat lumpy.
Pour the batter into a greased 9x13-inch baking dish, spreading it evenly across the bottom.
Spoon the peach mixture over the batter evenly, including the juices (do not stir).
Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
Remove from the oven and let it cool slightly before serving.
