Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
Add the minced garlic to the pot and cook for an additional 1 minute, stirring frequently to avoid burning.
Stir in the chili powder, cumin, smoked paprika, and cayenne pepper. Cook for about 30 seconds until the spices become fragrant.
Add the shredded chicken, black beans, corn, diced tomatoes with their juices, and chicken broth. Stir to combine.
Bring the mixture to a boil, then reduce the heat to low. Let it simmer for 20-25 minutes, allowing the flavors to meld together.
Taste and season with salt and pepper as needed.
Serve hot, garnished with fresh cilantro and lime wedges on the side for a zesty kick.
