Method
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Roll out each puff pastry sheet on a lightly floured surface. Cut them into circles (about 3-4 inches in diameter) using a cookie cutter or the rim of a glass. You can cut out an extra smaller circle for some puffs to create a top later.
Place the pastry circles on the prepared baking sheet, making sure they are spaced apart. For a shiny finish, brush the tops with a bit of water (or an egg wash, if desired).
Bake the pastry for 15-20 minutes or until golden and puffed. Keep an eye on them to prevent browning too quickly. Once done, let them cool on a wire rack.
In a mixing bowl, whip the heavy cream with powdered sugar, vanilla extract, and lemon juice until soft peaks form.
Once the puff pastries are completely cooled, carefully slice them in half horizontally to create lids.
Spoon or pipe the whipped cream onto the bottom half of each pastry circle. Top generously with sliced strawberries.
Place the top half back on and lightly dust the puffs with additional powdered sugar for an elegant touch.
