Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Prepare the Cauliflower: In a large mixing bowl, combine the flour, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.
Coat the Cauliflower: Add the cauliflower florets to the flour mixture and toss until well coated. Remove the florets and shake off any excess flour.
Breadcrumb Coating: Dip the floured florets in water briefly, then roll them in the breadcrumbs until well coated. Place the coated florets on the prepared baking sheet.
Bake the Cauliflower: Spray the cauliflower bites lightly with olive oil. Bake in the preheated oven for 20-25 minutes or until golden and crispy, turning halfway through for even cooking.
Prepare the Sriracha Honey Sauce: While the cauliflower is baking, mix together sriracha, honey, olive oil, and rice vinegar in a bowl until smooth. Adjust the spiciness by adding more sriracha if desired.
Toss and Serve: Once the cauliflower bites are done baking, place them in a large bowl. Drizzle the sriracha honey sauce over the hot cauliflower and toss to evenly coat.
Garnish and Enjoy: Transfer the sauced cauliflower to a serving platter, garnish with fresh cilantro, and serve immediately while hot.
