Spring Hash Brown Crust Quiche

4 cups frozen hash browns, thawed

2 tablespoons unsalted butter, melted

1/2 teaspoon garlic powder

Salt and pepper to taste

6 large eggs

1 cup milk

1 cup shredded cheddar cheese

1 cup fresh spinach, chopped

1/2 cup cherry tomatoes, halved

1/4 cup green onions, finely sliced

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large bowl, combine the thawed hash browns, melted butter, garlic powder, salt, and pepper. Mix until all the hash browns are well-coated.

      Press the hash brown mixture into the bottom and up the sides of a 9-inch pie dish to form a crust. Bake in the preheated oven for 20 minutes or until the edges are golden brown.

        While the crust is baking, whisk together the eggs and milk in a separate bowl. Season with a bit more salt and pepper.

          Once the crust is ready, remove it from the oven and lower the temperature to 350°F (175°C).

            In the prepared crust, layer the chopped spinach, halved cherry tomatoes, and green onions evenly across the bottom.

              Pour the egg mixture over the vegetable layer and sprinkle the shredded cheddar cheese on top.

                Return the quiche to the oven and bake for 30-35 minutes or until the center is set and lightly puffed.

                  Allow the quiche to cool for a few minutes before slicing.
