Prepare the Berries: Rinse the mixed berries under cold water. If using strawberries, hull and slice them into smaller pieces. Set aside.
Layering the Parfaits: In a tall glass or parfait cup, start with a layer of Greek yogurt at the bottom.
Add Granola: Sprinkle a layer of granola over the yogurt.
Fruit Layer: Add a layer of the mixed berries and diced mango on top of the granola. If desired, drizzle a little honey or maple syrup over the fruit for added sweetness.
Repeat Layers: Repeat the layers of yogurt, granola, and fruit until the glasses are filled, ending with a layer of berries on top.
Garnish: Finish with a dollop of yogurt, a few berries, and a sprig of mint for a fresh touch.
Chill (Optional): If you have time, place the parfaits in the refrigerator for about 10-15 minutes before serving to allow the flavors to meld.
