4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1/2 cup cream cheese, softened

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon lemon zest

Salt and pepper to taste

1 tablespoon olive oil

Toothpicks or kitchen twine

Instructions
 

Preheat the oven to 375°F (190°C).

    In a mixing bowl, combine the chopped spinach, feta cheese, cream cheese, minced garlic, oregano, lemon zest, salt, and pepper. Mix well until all ingredients are fully incorporated.

      Carefully cut a pocket in each chicken breast by slicing halfway through the thickest part, creating enough space to stuff the filling inside.

        Spoon the spinach and feta mixture into each chicken breast pocket, pressing gently to secure the filling. Use toothpicks or kitchen twine to close the pocket if needed.

          Heat olive oil in a large oven-safe skillet over medium-high heat. Add the stuffed chicken breasts and sear for about 3-4 minutes on each side until golden brown.

            Transfer the skillet to the preheated oven and bake the chicken for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).

              Remove from the oven and let the chicken rest for 5 minutes before removing toothpicks or twine.

                Slice the stuffed chicken breasts in half to reveal the colorful filling and serve hot.
