Instructions
Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 2-3 minutes until they are translucent.
Add the minced garlic and diced bell pepper to the skillet. Cook for another 2-3 minutes until the bell peppers soften, stirring occasionally.
Add the chopped spinach and cherry tomatoes to the skillet. Cook for 2-3 minutes until the spinach wilts down and the tomatoes become slightly soft.
Create four small wells in the vegetable mixture using a spoon. Crack an egg into each well.
Sprinkle salt, pepper, and red pepper flakes (if using) over the eggs.
Cover the skillet with a lid and cook for about 5-7 minutes until the egg whites are set and yolks are cooked to your liking.
Once cooked, remove the skillet from heat and garnish with fresh parsley or chives.
Notes
Feel free to add other vegetables or spices according to your taste.
