Prepare the Mango Salsa: In a medium bowl, combine diced mango, red onion, red bell pepper, jalapeño, and cilantro.
Add lime juice, and season with salt and pepper. Mix well and allow to chill in the refrigerator while you prepare the shrimp.
Season the Shrimp: In a bowl, toss the shrimp with olive oil, chili powder, cumin, garlic powder, cayenne pepper, salt, and pepper until they are well-coated.
Cook the Shrimp: Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, or until shrimp are pink and opaque. Remove from heat.
Warm the Tortillas: In the same skillet or on a separate griddle, warm the corn tortillas for about 30 seconds on each side until they’re pliable and lightly toasted.
Assemble the Tacos: On each tortilla, layer the cooked shrimp, shredded cabbage, and a few slices of avocado.
Top with Salsa: Spoon a generous amount of mango salsa on top of each taco.
Serve: Enjoy your spicy shrimp tacos immediately with lime wedges on the side for extra zest.
