Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy clean-up.
Prepare the corn ribs: Using a sharp knife, carefully cut the corn lengthwise into quarters, creating rib-like pieces. Place the corn sections on the prepared baking sheet.
Make the sauce: In a bowl, whisk together the honey, soy sauce, minced garlic, sriracha, smoked paprika, salt, black pepper, and lime juice until well combined.
Glaze the corn: Brush the sauce generously over the corn ribs, making sure to coat them evenly. Reserve some of the sauce for basting later.
Bake the corn: Place the baking sheet in the oven and bake for 20-25 minutes, turning the corn halfway through. Baste with the reserved sauce during the last 10 minutes of baking for a sticky finish.
Caramelize for flavor: For extra char, switch the oven to broil and broil the corn ribs for an additional 2-3 minutes, keeping a close eye to prevent burning.
Serve and garnish: Once the corn ribs are golden and sticky, remove them from the oven. Garnish with fresh chopped cilantro and serve with lime wedges on the side.
