Method
In a blender, combine the diced mangoes, tamarind paste, honey or maple syrup, ground cumin, black salt, and grated ginger.
Add 1 cup of cold water to the blender and blend until smooth.
Taste the mixture and adjust sweetness as needed by adding more honey or maple syrup if desired.
Strain the blended mixture through a fine mesh sieve into a large pitcher to remove any pulp, pressing gently with a spatula to extract as much liquid as possible.
Add the remaining 2 cups of cold water (or sparkling water) to the pitcher and stir well to combine.
Chill the cooler in the refrigerator for at least 30 minutes before serving.
To serve, fill glasses with ice cubes and pour the spiced mango tamarind cooler over the ice.
Garnish each glass with fresh mint leaves and a lime wedge.
