Method
Pour the apple juice (or cider) and water into the Instant Pot.
Add the cinnamon sticks, cloves, star anise, sliced orange, ginger, and brown sugar to the pot. If you are using nutmeg, add it as well.
Stir the mixture gently to dissolve the brown sugar and distribute the spices evenly.
Secure the Instant Pot lid and set the valve to the sealing position.
Select the Manual or Pressure Cook setting and set the time for 10 minutes.
Once the cooking cycle is complete, allow the pot to naturally release pressure for about 10 minutes, then perform a quick release to let out any remaining steam.
Carefully open the lid and give the cider a good stir to mix the spices.
Strain the cider through a fine-mesh sieve into a large pitcher or bowl to remove the solids.
Taste and adjust sweetness or spice levels as desired by adding more sugar or spices.
Serve warm, garnished with additional cinnamon sticks or orange slices if desired.
