Instructions
In a medium bowl, whisk together flour, ginger, cinnamon, baking soda, and salt. Set aside.
In a large mixing bowl, cream the softened butter with brown sugar and granulated sugar until light and fluffy.
Beat in the egg, molasses, and vanilla extract until well blended.
Gradually add the dry ingredients to the wet mixture, mixing until combined.
Divide the dough into two portions, wrap in plastic wrap, and refrigerate for at least 1 hour (or overnight) to make it easier to roll out.
Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
On a floured surface, roll out one portion of dough to about 1/4-inch thickness. Use cookie cutters to cut out gingerbread men shapes.
Place the cookies on the prepared baking sheets, leaving space between each cookie.
Bake the cookies for 8-10 minutes, or until the edges are firm and the centers are soft.
Remove from the oven and let cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
Once cool, use royal icing and sprinkles to decorate your gingerbread men as desired.
Notes
Chill the dough for easier rolling and cutting.
