Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture until just combined.
Fold in the chocolate chips and mini marshmallows, reserving a handful of each for topping.
Spread half of the cookie dough mixture into the bottom of the prepared baking pan, pressing down evenly.
Sprinkle the graham cracker crumbs over the dough layer, then add the reserved chocolate chips and mini marshmallows on top of the crumbs.
Dollop the remaining cookie dough over the s'mores mixture, spreading it as best as you can to cover. It’s okay if some of the filling shows through!
Top with an extra sprinkle of graham cracker crumbs for added texture.
Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and the center is set.
Allow the bars to cool in the pan for at least 15 minutes before transferring to a cutting board. Cut into squares for serving.
