Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper for easy removal.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
Fold in the chocolate chips and graham cracker crumbs until evenly distributed throughout the dough.
Spread half of the cookie dough evenly across the bottom of the prepared baking pan. Then sprinkle the mini marshmallows over the cookie layer, creating a nice even layer.
Spoon the remaining cookie dough over the top of the marshmallows. Use your hands or a spatula to flatten the dough and cover the marshmallows as best as you can.
Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and the center is set.
Allow to cool in the pan for about 10 minutes before slicing into squares. For a more gooey texture, serve warm.
