Prepare your grill or smoker by preheating it to medium heat. If you don’t have a smoker, you can use a grill with a smoking box or a foil packet.
Slice the tomatoes in half and place them cut-side down on the grill or smoker. Add the peaches similarly. Grill for 6-8 minutes until they are charred and have grill marks.
Remove the grilled tomatoes and peaches from the heat and let them cool slightly before chopping them into small pieces.
In a mixing bowl, combine the diced smoked tomatoes and peaches.
Add the chopped red onion, minced jalapeño, and fresh cilantro to the bowl.
Drizzle the lime juice and sprinkle the smoked paprika over the mixture.
Gently toss everything together until well combined. Season with salt and pepper to taste.
Let the salsa sit for at least 15 minutes to allow the flavors to meld.
