In a large pot, combine the chopped figs, granulated sugar, lemon juice, ground cinnamon, red pepper flakes, and sea salt.
Place the pot over medium heat and bring the mixture to a gentle boil, stirring occasionally to help dissolve the sugar.
Once boiling, reduce the heat to low and let it simmer uncovered for about 30-40 minutes, stirring frequently. The mixture should thicken and become jam-like.
To check the consistency, drop a spoonful of jam onto a cold plate and let it sit for a minute. If it holds its shape and doesn't run, it's ready!
Remove the pot from heat and let the jam cool for a few minutes before transferring it to sterilized jars. Seal tightly.
Allow the jam to cool completely at room temperature before refrigerating. It can be stored in the fridge for up to 3 weeks.
