Ingredients
Method
In a medium bowl, toss the cleaned shrimp with garlic powder, salt, and pepper.
Heat a skillet over medium heat and add 1 tablespoon of olive oil.
Once hot, add the shrimp to the skillet. Cook for about 2-3 minutes on each side until shrimp are pink and opaque. Remove from heat and let cool.
In a large mixing bowl, combine diced avocados, cherry tomatoes, red onion, and cilantro.
In a small bowl, whisk together the remaining olive oil and lime juice, adding a pinch of salt and pepper.
Add the cooled shrimp to the avocado mixture, then drizzle the dressing over everything. If using, add the chopped jalapeño for a spicy kick.
Gently toss to combine all the ingredients without mashing the avocado.
Adjust seasoning if necessary with more salt, pepper, or lime juice.
