Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
In a large mixing bowl, combine the sliced chicken, bell pepper, and red onion.
Drizzle the olive oil over the chicken and veggies.
Sprinkle the chili powder, cumin, smoked paprika, garlic powder, salt, and pepper over the mixture. Toss everything together until well coated.
Spread the chicken and vegetable mixture evenly on the prepared baking sheet.
Bake in the preheated oven for 20-25 minutes, stirring halfway through, until the chicken is cooked through and the vegetables are tender.
While the chicken and veggies are baking, warm the tortillas in a skillet or microwave until pliable.
Once cooked, remove the sheet pan from the oven and let it cool slightly.
Serve the fajitas by filling each tortilla with the chicken and vegetable mixture. Garnish with fresh cilantro and serve with lime wedges on the side.
