In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3 minutes.
Add the diced sweet potatoes to the skillet and stir well, allowing them to cook for about 5-7 minutes until slightly tender.
Push the sweet potato mixture to one side of the skillet and add the ground turkey to the other side. Cook it until browned, breaking it apart with a spatula, about 5-7 minutes.
Once the turkey is cooked, mix everything together and add the diced bell pepper, black beans, cumin, smoked paprika, chili powder, salt, and pepper. Cook for an additional 3 minutes until everything is well combined and heated through.
Transfer the mixture to a greased 9x13 inch baking dish, spreading it evenly.
If desired, sprinkle the shredded cheese on top.
Bake in the preheated oven for 20-25 minutes, or until the sweet potatoes are fully cooked and the cheese is bubbly and golden.
Remove from the oven and let it cool slightly. Garnish with fresh cilantro before serving.
