Pat the steak cubes dry with paper towels. Season with salt and pepper to taste.
In a large skillet, heat the olive oil over medium-high heat until shimmering but not smoking.
Add the steak cubes to the skillet in a single layer, sear for about 2-3 minutes on each side for medium-rare, or until they reach your desired doneness. Remove the steak bites from the pan and set aside.
In the same skillet, lower the heat to medium. Add the butter and let it melt. Once melted, add the minced garlic, chopped rosemary, and thyme. Sauté for about 1-2 minutes, stirring frequently, until the garlic is fragrant and slightly golden.
Return the steak bites to the skillet and toss them in the garlic butter mixture until well-coated. Cook for an additional minute to warm through.
Remove from heat and garnish with chopped fresh parsley. Serve immediately.
