Method
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper until well combined.
Add the cubed cold butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.
Stir in the shredded cheddar and grated parmesan cheese, ensuring they are evenly distributed throughout the mixture.
In a separate bowl, whisk together the buttermilk and egg until well combined.
Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overwork the dough.
Turn the dough out onto a lightly floured surface and pat it into a rectangle about 1 inch thick.
Cut the dough into squares or triangles and place them on the prepared baking sheet, leaving space between each scone.
Bake in the preheated oven for 15-20 minutes, or until the scones are golden brown on top.
Once baked, remove from the oven and let cool slightly. Garnish with freshly chopped chives before serving.
