Prepare the Dough: In a large bowl, combine the warm water, sugar, and active dry yeast. Allow to sit for about 5 minutes until frothy.
Add the flour, salt, and olive oil to the yeast mixture. Stir until a dough forms. Knead on a lightly floured surface for about 5-7 minutes until smooth.
First Rise: Place the dough in a greased bowl and cover it with a damp cloth. Let it rise in a warm place for about 1 hour, or until it doubles in size.
Preheat Oven: Preheat your oven to 425°F (220°C).
Cook Sausage: In a skillet over medium heat, cook the crumbled sausage until browned and fully cooked. Drain excess fat and set aside.
Mix the Cheese Filling: In a separate bowl, mix together the ricotta, mozzarella, Parmesan, garlic powder, onion powder, salt, pepper, and red pepper flakes (if using). Stir in the cooked sausage and chopped spinach.
Assemble the Pizza: Once the dough has risen, punch it down and roll it out on a floured surface to fit a deep-dish pizza pan. Press the dough into the pan, letting it come up the sides.
Spread the cheese and sausage mixture evenly over the crust.
Second Rise: Cover the assembled pizza and let it sit for another 15-20 minutes to rise slightly.
Bake: Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the cheese is bubbling.
Cool and Slice: Let the pizza cool for about 5 minutes before slicing into wedges.
