Method
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.
In a large skillet over medium heat, cook the sausage, breaking it up with a spoon until browned and fully cooked (about 5-7 minutes). Drain any excess grease and set aside to cool slightly.
In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, thyme, paprika, salt, and pepper until fully combined.
Add the thawed hash browns to the egg mixture, stirring gently to combine. Then fold in the cooked sausage, diced bell peppers, and half of the shredded cheddar cheese.
Pour the mixture into the prepared baking dish, spreading it out evenly. Top with the remaining cheddar cheese and sprinkle with chopped green onions.
Bake in the preheated oven for 35-40 minutes or until the eggs are set and the top is lightly golden.
Remove from the oven and let it cool for a few minutes. Slice into squares to serve.
