Preheat the oven to 375°F (190°C).
In a large bowl, combine the salsa, corn, black beans, cumin, chili powder, and a pinch of salt and pepper. Mix well and set aside.
Heat the olive oil in a large oven-safe skillet over medium-high heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Sear each side for about 4-5 minutes until golden brown.
Once the chicken is seared, pour the salsa mixture over the chicken breasts, making sure each piece is well-covered.
Sprinkle the shredded Monterey Jack cheese over the top.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F or 74°C).
Once done, remove the skillet from the oven and let it rest for 5 minutes. Garnish with fresh cilantro.
Serve the Salsa Fresca Chicken with lime wedges on the side. For a complete meal, pair it with rice or tortillas!
