Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the sliced zucchini, minced garlic, olive oil, oregano, garlic powder, salt, and pepper. Toss everything together until the zucchini is evenly coated with the oil and seasonings.
Spread the zucchini mixture in a single layer on a baking sheet lined with parchment paper.
Bake in the preheated oven for about 15 minutes, or until the zucchini is tender and begins to brown slightly.
Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese evenly over the zucchini.
Return the baking sheet to the oven and roast for an additional 5-7 minutes, or until the cheese is golden and bubbly.
Once done, take out the zucchini and let it cool slightly. Garnish with fresh chopped parsley if desired.
Serve warm as a delicious side dish or as part of a hearty salad.
