Method
In a medium saucepan over medium heat, combine the fresh raspberries and honey (or maple syrup).
Stir gently and cook the mixture for about 5-7 minutes until the raspberries start to break down, releasing their juices.
Use a fork or potato masher to mash the raspberries to your desired consistency (smooth or chunky).
Add the chia seeds, lemon juice, and optional vanilla extract to the saucepan.
Stir well to combine and cook for another 2-3 minutes, allowing the chia seeds to absorb some of the liquid and thicken the jam.
Remove the saucepan from heat and let the jam cool to room temperature.
Once cooled, pour the jam into a clean jar and refrigerate. The jam will continue to thicken as it cools.
