In a large mixing bowl, combine the rolled oats, pumpkin puree, almond butter, honey (or maple syrup), and vanilla extract.
Add in the pumpkin spice and salt. Mix well until all ingredients are fully combined and a thick mixture forms.
If desired, fold in mini chocolate chips and chopped nuts for extra texture and flavor.
Using your hands, roll the mixture into small bite-sized balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
Once all the bites are rolled, place the baking sheet in the fridge for about 30 minutes to allow them to firm up.
After chilling, transfer the energy bites to an airtight container and store them in the fridge for up to a week.
