Instructions
In a large salad bowl, place the mixed greens as the base.
Evenly distribute the pomegranate seeds, orange segments, toasted pecans, crumbled feta, and thinly sliced red onion over the greens.
Add the diced avocado on top of the salad for creaminess.
In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper to create the dressing.
Drizzle the dressing over the salad just before serving and gently toss to combine all the ingredients.
Taste and adjust the seasoning if needed.
Notes
Serve the salad in wide shallow bowls and garnish with extra pomegranate seeds and a sprig of fresh mint for a pop of color and freshness.
