Start by washing the cucumbers thoroughly. For a crunchier texture, you can leave the skin on. If you prefer, you may peel them as well. Thinly slice the cucumbers and place them in a large bowl.
In a separate mixing bowl, combine the sour cream, apple cider vinegar, chopped dill, minced garlic, and honey. Whisk these together until smooth and well blended.
Pour the creamy mixture over the sliced cucumbers in the large bowl. Gently toss until all the cucumber slices are evenly coated with the dressing.
