Method
In a blender, combine the chopped plums, grated ginger, honey (or maple syrup), and lime juice. Blend until smooth.
Strain the plum-ginger mixture through a fine mesh sieve into a mixing bowl, pressing the pulp with the back of a spoon to extract all the liquid.
Once you have the juice, mix it with the brewed kombucha in the bowl, stirring gently to combine without losing too much carbonation.
If desired, add a splash of sparkling water for an extra fizzy effect.
Taste the mixture and adjust sweetness if necessary by adding more honey or syrup.
To serve, fill glasses with ice and pour the kombucha mixture over the top. Garnish with fresh mint leaves.
