Instructions
Start by spreading a generous layer of basil pesto on one side of each slice of sourdough bread.
In a bowl, combine shredded mozzarella, crumbled goat cheese, and chopped sun-dried tomatoes. Season with salt and pepper to taste.
Take two slices of bread, pesto side up, and evenly distribute the cheese mixture over them.
Top the cheese with the remaining two slices of bread, pesto side down, creating two sandwiches.
In a large skillet, heat the olive oil over medium heat until shimmering.
Carefully place the sandwiches in the skillet and cook for about 3-4 minutes, or until golden brown and crispy.
Flip the sandwiches and cook the other side for an additional 3-4 minutes, pressing down slightly to ensure even toasting.
Once both sides are golden brown and the cheese is melted, remove the sandwiches from the skillet and let them rest for a minute.
Cut the sandwiches in half diagonally and serve hot.
Notes
Use store-bought pesto for a quicker option.
