In a large mixing bowl, combine the rolled oats, ground flaxseed, chia seeds, and a pinch of salt. Stir the dry ingredients together until well mixed.
In a separate bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract. Mix until smooth and well combined.
Pour the peanut butter mixture into the bowl with the dry ingredients. Stir everything together until the mixture is evenly combined.
Fold in the dark chocolate chips gently until they're evenly distributed throughout the mixture.
Once the mixture is well combined, use your hands to roll small portions (about 1 inch) into balls. Place them on a parchment-lined baking sheet as you go.
After rolling all the energy bites, place the baking sheet in the refrigerator for at least 30 minutes to allow the bites to firm up.
Once firm, transfer the energy bites to an airtight container for storage. They can be kept in the fridge for up to a week or frozen for longer storage.
