In a large mixing bowl, combine the rolled oats, ground flaxseed, and a pinch of salt. Stir well to ensure even distribution.
In a separate bowl, mix together the peanut butter, honey (or maple syrup), and vanilla extract until smooth.
Pour the peanut butter mixture into the bowl with the dry ingredients. Mix until everything is well combined.
Gently fold in the mini chocolate chips until evenly distributed throughout the mixture.
Once combined, use your hands to scoop out small portions and roll them into bite-sized balls, about 1 inch in diameter.
Place the energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
After chilling, transfer the bites to an airtight container. They can be stored in the fridge for up to a week or in the freezer for longer freshness.
